Thanksgiving 2019

It is funny how observations become traditions. Ever since Henry was a little boy, he never enjoyed meat. Sure he eats meat but it just doesn't come natural to him. Jeffrey on the other hand is a meat eater, a true carnivore. When Thanksgiving comes around, Jeffrey's true nature become alive and we call him "the turkey man." He has one and only item on his mind. Henry, who has been growing up in this joyous holiday environment, has decided a few years ago that he also loves turkey and all things Thanksgivingy.

This year I decided to make a different, maybe a bit more challenging recipe than my usual spatchcocked turkey. I partially used Jacques Pepin's (JP) recipe that he cooked on his TV show with Julia Child and partially an imitation of what I have learned over the years. I made a buttermilk brine with spices. I totally portioned the turkey according to JP including taking the thigh bone out. After brining all the piece in my mixture I placed some stuffing into the boneless thigh. It was definitely everyone's favorite Thanksgiving meal. Please let me know if you would like this recipe. It was definitely outstanding as you can see from the photos.
